oriental rice skillet

I decided to start writing the posts completely on English, because I think that English as a world language can reach far more people than the posts written in German.
Lately, I have a new favorite meal now as the weather became colder. The meal is very satiating and hearty. With the use of different oriental flavors, such as cumin, curry etc., the meal has an oriental touch I really love right now. Especially the curry powder gives it an incredibly delicious flavor, because I bought it in Greece and from there, the curry is so good. Therefore I can really recommend you using a high-quality curry for the best flavor. 
Now I want to sure you this delicious, healthy and filling meal, perfect for the autumn which is knocking on the door. 

Ingredients: for 1-2 persons
- 1 onion
- 1 garlic clove
- 500g different vegetables ( zucchini, eggplant, bell pepper, broccoli, cauliflower etc.)
- 150g spinach ( fresh or frozen)
- 1 can of chickpeas
- 200-300 cooked brown rice 
- 1 -2 TBSP curry powder
- each 1/2 tsp cumin, turmeric, paprika, pepper, salt
- 1-2 TBSP Soy sauce

Directions: 
1. heat a skillet and roast the onion and garlic 
2. then add all the spices and roast them as well
3. after 2-3 minutes, add the veggies and let them cook until tender, around 10 minutes
4. in the next step, wash the chickpeas, put them  into the skillet, along with the cooked rice. 
5. in the last step, add the spinach and let it simmer for 3-4 minutes. Then adjust the taste by adding some more spices, salt or pepper and serve it
