How to hide veggies in your smoothie bowl

This smoothie bowl was made with zucchini, banana and blueberries :)


I really loving experimenting in my kitchen and it ends like zucchini in my smoothie bowl...What ?! I know, this is not a typical ingredient for a smoothie but I wanted some veggies in my smoothie without really tasting it like spinach or kale. So, I had the idea to simply cut up a zucchini, throw it in a blender together with some fruit and it tasted amazing. It is possible to add veggies to a smoothie without tasting it and I want to present you a recipe for that :)

Ingredients for one smoothie bowl
- 1 zucchini ( c. 200-300g)
- 2 large bananas
- 1 TBSP cacao powder
- sweetener of your choice ( I used 5 drops of stevia)
- your favorite toppings ( raspberries, chia seed, granola) etc.

Directions:
1. Cut the zucchini and bananas in smaller pieces and throw them into the blender
2. add the cacao powder and sweetener
3. Pour some water or plant-based milk into the blender and mix until well combined
4. Pour the smoothie into a bowl and decorate with the topics of your choice

vegan brownies in a hurry


Some weeks ago, I celebrated my 17th Birthday and therefore wanted to bake some brownies for my classmates. Thus, I searched for a recipe I could take as template and bake some Brownies.
The result of it was the bomb! They were unbelievably fudgy, chocolatey and extremely easy and fast to made. Another advantage I wanted to add, is that even I really love those brownies, although I am normally not that fan of pastries with a lot of sugar. However, they only had a subtle sweet flavor, so I really really like them.
Now comes the huge problem: Because I did not write down,  how I did those brownies exactly, I was desperate the second time I tried it... Although the taste of the Brownies still was good, they were not that fudgy and chocolatey anymore :( I tried over and over again to change some amounts of ingredients ( mainly the baking powder) until I received the perfect brownies I made the first time :) I noticed that I took the first time 1 1/2 teaspoon baking powder, instead of 1 1/2 packages ^^. So if you want to make incredibly delicious, vegan Brownies in no time, then try this recipe.

Ingredients (for one baking tray):
- 500g of flour
- 350g white sugar ( if you want a healthier alternative, then chose xylit)
- 170g unsweetened cocoa powder
- 1 1/2 tsp baking powder
- a pinch of baking soda
- 650ml plant-based milk
- 150ml oil
- toppings

Directions:
1. Preheat the oven to 200°C air circulation
2. Add all dry ingredients in a large bowl and mix well
3. Pour the wet into the dry ingredients and mix until well combined
4. Put a baking sheet on a tray , pour the dough on the baking tray and spread it out evenly
5. Add some toppings such as chocolate chunks, oreos etc.
5. Bake for 12-15 minutes
6. Let it cool down, cut the brownies into pieces and devour :)

oriental rice skillet


I decided to start writing the posts completely on English, because I think that English as a world language can reach far more people than the posts written in German.
Lately, I have a new favorite meal now as the weather became colder. The meal is very satiating and hearty. With the use of different oriental flavors, such as cumin, curry etc., the meal has an oriental touch I really love right now. Especially the curry powder gives it an incredibly delicious flavor, because I bought it in Greece and from there, the curry is so good. Therefore I can really recommend you using a high-quality curry for the best flavor. 
Now I want to sure you this delicious, healthy and filling meal, perfect for the autumn which is knocking on the door. 

Ingredients: for 1-2 persons
- 1 onion
- 1 garlic clove
- 500g different vegetables ( zucchini, eggplant, bell pepper, broccoli, cauliflower etc.)
- 150g spinach ( fresh or frozen)
- 1 can of chickpeas
- 200-300 cooked brown rice 
- 1 -2 TBSP curry powder
- each 1/2 tsp cumin, turmeric, paprika, pepper, salt
- 1-2 TBSP Soy sauce

Directions: 
1. heat a skillet and roast the onion and garlic 
2. then add all the spices and roast them as well
3. after 2-3 minutes, add the veggies and let them cook until tender, around 10 minutes
4. in the next step, wash the chickpeas, put them  into the skillet, along with the cooked rice. 
5. in the last step, add the spinach and let it simmer for 3-4 minutes. Then adjust the taste by adding some more spices, salt or pepper and serve it

Schoko-Erdnussbutter Cupcakes



Ich denke, der Titel verrät schon alles ?! Lecker+Lecker+Lecker = Schoko-Erdnussbutter cupcakes! Die meisten von uns sind schon allein verrückt nach Schokolade, aber wenn man diese dann noch mit Erdnussbutter kombiniert, hat man einen Suchtfaktor von 10.000.000.000 ;) Selbstverständlich sind die Cupcakes vegan, weswegen ihr diese kleinen Suchtmacher ohne irgendwelche Reue genießen könnt ( mal abgesehen davon, dass sie ganz schön reinhauen ^^). Dieses Rezept kann ich wahnsinnig empfehlen, wenn man nicht-veganen Gästen etwas Süßes anbieten möchten, denn bei diesen Cupcakes kommt niemand auf die Idee, dass sie vegan sind.
Ich könnte noch Ewigkeiten weiterschwärmen über diesen schokoladigen und nussigen Geschmack, aber stattdessen zeige ich euch jetzt mal das Rezept.
P.S. Eine tolle Sache muss ich euch noch erzählen: Die Cupcakes gehen wahnsinnig schnell!

Zutaten für 12 Muffins:
- 100g vegane Butter ( Alsan)
- 120g Zucker
- 165g Mehl
- 1 1/2 TL Backpulver
- 1 TL Vanillextrakt
- 50g Kakao
- 100ml Pflanzenmilch ( Soja, Mandel, Hafer etc.)
- 100ml Mineralwasser

Buttercreme:
- 100g vegane Butter ( Alsan)
- 150g Puderzucker
- 120g Erdnussbutter

Zubereitung:
1. Ofen auf 180°C vorheizen
2. Butter und Zucker schaumig schlagen
3. Alle trockenen Zutaten hinzugeben und so gut verrühren wie möglich
4. Nach und nach die Pflanzenmilch und das Mineralwasser abwechselnd dazugeben und mit dem Handrührgerät mixen.
5. Den Teig in Muffinförmchen füllen und für 27 Minuten backen
6. Abkühlen lassen und in der Zwischenzeit die Buttercreme machen
7. Für die Creme, alle Zutaten in eine Schüssel geben und verrühren bis man eine glatte Creme hat
8. Wenn die Muffins abgekühlt sind, die Buttercreme darauf verteilen und verzieren (z.B. mit Erdnüssen oder Schokosplittern)
